2 cups cooked rice
1-2 tablespoon oil
1 lb chicken breast, cut into strips
1 onion, chopped
1 pepper, sliced
1 cup salsa
Shredded cheese
Cook chicken, onion and peppers in oil until chicken is cooked through-about 10-12 minutes. Add salsa. Heat through. Remove from heat and cover with cheese. When cheese is melted, serve over rice.
